Betting on yourself

Recently I applied for Chopped! Yes, Chopped! A lot of times it’s the people you don’t know that support you more often than the ones you thought would. SO I decided in this year 2022, I will take more risks, explore food more and take a chance on me. Support or no support.

Will you bet on yourself? Will you go that extra mile? Do you have enough faith to do something you would never do?

What is your biggest challenge in the kitchen?

I bet when reading this question it really makes you think. Doesn’t it?

It even made me think. It made me think because there can be so many different challenges to choose from. But the take away is what is your BIGGEST challenge?

Here are some examples:

  1. Lack of storage
  2. Cluttered space
  3. Lighting
  4. kitchen issues (clogged sinks, poor counter spacing, etc)

There are so many different things. I mean I can go on and on. So, I’d have to say my biggest challenge would be poor counter spacing. When I cook in the kitchen I like to be able to move around, groove, turn around without feeling like I am being backed into a corner or like I am going to run into something.

We all have different challenges. For instance some may be lack of energy or time, not knowing what you want to cook, or one thing I don’t really look so forward to, is cleaning. This week lets think about some of our challenges and how we can relieve ourselves of the stress from this challenge and how we can make it less challenging!

Recipe:

  1. 1 pound carne asada
  2. 1/2 onion (chopped)
  3. 1 bunch of cilantro (chopped)
  4. 4 limes (sliced in sections of 4)
  5. Tortillas (your choice of flour or corn)
  6. 1 tbsp salt
  7. 1 tbsp pepper

Recipe for Salsaaaaaaaaaa!

  1. 1 pound green tomatillos
  2. 1 whole onion (white)
  3. 1 garlic clove
  4. 2 green jalapeño peppers
  5. 1 cup of water

1/2 lb Andouille sausage, smoked
1/2 lb Ham, smoked
1 Meaty ham bone, large

Produce
6 Bay leaves
1 lb Beans, dried red
6 cloves Garlic
2 Jalapenos
1 Onion, medium
1 Scallions, thinly slice
2 tsp Thyme, dried seeds
1 Tomato

Condiments
1 Hot sauce
2 tbsp Mustard, whole grain

Pasta & Grains
1 White rice

Baking & Spices
1 tsp Black pepper
1 tsp Cayenne pepper
1 tbsp Kosher salt

Oils & Vinegars
1/4 cup Red wine vinegar

Teriyaki Chicken Stir Fry

  • 2 garlic cloves (chopped)
  • 1/2 bell pepper red
  • 1/2 bell pepper orange
  • 1/2 bell pepper yellow
  • 1/2 white onion
  • 2 cups of frozen broccoli
  • 1 1/2 cup of teriyaki marinade (panda express brand)
  • 2 cups of Jasmine fried rice
  • 1 tbsp salt
  • 1 tbsp pepper
  • 2 cups chicken breast chopped
  • 2 tbsp olive oil
